Non-traditional July Fourth Celebration


This year we decided to celebrate July 4th a little differently.  Since nearly everyone in my family is watching his or her waistline, we all agreed that the usual BBQ ribs and other high fat foods were out.  We thought outside the box and decided that a Mexican celebration would be great.  From the look of it, it seems that our celebration would have been well in order for Cinco De May (Mexican Independence Day) rather than the Fourth of July.  ^^  At any rate, the food was great and none of us had any regrets after eating.  :)
