Ingredients:2 eggs
2 slices of turkey bacon
1 small onion
1/2 cup diced green peppers
1/2 cup cheese

Directions:Butter omelet pan and heat until hot.

In a small bowl, crack eggs and salt and pepper to taste.

Dice onions, turkey bacon, and peppers and sauté in a skillet until soft but not mushy. Remove cooked vegetables and turkey bacon from skillet and set aside. *Turkey bacon should be added to the skillet first; let it cook about 5 minutes before adding peppers and onions.

Pour eggs into omelet pan and let cook. With a spatula, scrape sides of the pan, moving the wet egg around until no more wetness remains.

Sprinkle cheese on the egg and add the filling—turkey bacon, onion, and peppers. Fold egg into half and remove from the pan (no more cooking is necessary).

*Serve omelet with sour cream and salsa.
