Irish Shepherd's Pie

Ingredients:

2 tablespoons butter

1 white onion

2 celery stalks, diced

2 carrots, diced

2 cloves minced garlic

1 teaspoon minced fresh rosemary

1 1/2 pounds ground turkey

1 tablespoon tamato paste

2 tablespoons Worchestershire sauce

1/2 cup beef stock or broth

2 cups green peas

1 batch of mashed potatoes

4 tablesoopns shredded Parmesan cheese

Directions:

Melt butter in a large saute pan over medium-high heat. Add diced onion, diced celery stalks, diced carrots and minced garlic. Saute until vegetables are softened somewhat, about 8-10 minutes. Stir in 1 teaspoon minced fresh rosemary, stir.

Brown turkey until fully cooked

Next, stir in tomato paste, Worchestershire sauce and beef broth. Stir again and them mix in the green peas.

When most of the liquid has cooked off, spoon the mixture into a casserole dish. Top with the prepared mashed potatoes and spread evenly. Garnish with grated Parmesan cheese.

Bake in preheated 375 F oven for approxmately 30 minutes, or until the potato topping looks golden brown.
