Torri's Twice-baked Potato



Ingredients
1 large potato
1/2 cup of milk
2 tablespoons butter
1/2 cup bacon bits
1 small onion
1 1/2 teaspoon salt
1 1/2 teaspoon pepper
1/2 teaspoon parsley
3/4 cup sour cream
1/2 three cheese Mexican fiesta cheese

Steps
1. Wash potato and dry. Rub potato down with butter and sprinkle with salt. Wrap in foil and bake until soft (about 45 minutes).

2. Dice onion and saute in a teaspoon of vegetable oil until translucent in color

3. When potato is completely cooled, spilt in half and scoop out potato white. DO NOT break the skin.

4. Put white in a sauce pan and mash. Add milk, butter, bacon bits, sauteed onions, salt, pepper, parsley, sour cream, and cheese. Cook for 5 minutes over high heat and stir.

5. Using a large spoon, fill the potato skins with mixture and sprinkle the tops with more cheese (optional).

6. Bake on 450 for 10-15 minutes














*Served here with steamed broccoli and garlic and herbed baked fish.
